creamy tomato soup

i'm always looking to take comfort foods and put a healthy spin on them.  not only is this healthier version of tomato soup great for you, it tasted amazing and couldn't have been easier to whip together.  basically it's a win all around- if you like tomato soup it's a must try!

{grilled cheese with gouda, perfect for dipping}

creamy no-dairy tomato soup

what you'll need
4 beefsteak tomatoes 
4 heirloom tomatoes
1 brown onion
2 cloves fresh garlic
3 tbsp chopped fresh basil
2-3 tbsp evoo
salt + pepper

1. heat oven to 425 degs.
2. core tomatoes and cut into quarters; chop onion into 1 in. pieces
2. combined tomatoes, onion and garlic in baking dish and lightly coat with evoo
3. sprinkle lightly with salt and pepper
4. roast in oven for 45 minutes
5. remove from oven, add fresh basil and blend with food processor or immersion blender until smooth
6. serve!

this recipe makes enough for two large servings plus a little to taste.  i've also added smoked paprika and chili flakes for a spicier version!  enjoy
