after moving in together, my roomie and i made a promise to each other to cook and eat together as often as our schedules made possible. the only issue with that became apparent quickly as his idea of dinner is a bag of frozen taquitos and cholula, while i tend to go for large salads and quinoa dishes (every guys favorite right?..). in order to find a happy medium, i've sought out recipes that we can both enjoy that include healthy twists to our favorite dishes. this black bean and turkey chili is healthy, super easy to make and we both loved it!
easy black bean and turkey chili
ingredients:
- 1 tbsp olive oil
- 1 c chopped brown onion
- 1 tbsp minced garlic
- 1 chopped orange bell pepper
- 1 chopped red bell pepper
- 1 lb ground turkey
- 20 oz crushed organic tomatoes
- 2 (16-oz) cans black beans, drained and rinsed
- 1 (16-oz) can corn, drained and rinsed
- 1 tbsp chili powder
- 1 tsp chili flakes
- 1 tbsp sugar
- 1 c low-sodium chicken stock
- 1/2 tsp garlic powder
- 11/2 tsp sea salt
- 1 tsp dried basil
- 1/2 tsp dried oregano
- *for a little extra spice add 2 tbsp hot sauce (recommended: Tabasco)

in a large skillet, saute your chopped ingredients in olive oil over medium heat until onions are translucent; add ground turkey and cook until browned. |
add remaining ingredients and stir well to combine; reduce heat to low and simmer for 1 hour, stirring occasionally.
